Pumpkin Spice Pancake
- 2 eggs
- ½ cup pumpkin puree
- 1 cup Designer Whey French Vanilla
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp baking powder
- 2 tbsp almond milk
- Mix all ingredients together until smooth.
- Heat butter or oil in large pan over medium heat.
- Pour or scoop the batter onto the hot pan in batches (about ¼ cup for each).
- Brown on both sides and serve with pure maple syrup and toppings of choice (ideas: shredded coconut, pumpkin seeds, honey, roasted apples, walnuts).
