Pumpkin Spice Pancake


  • 2 eggs
  • ½ cup pumpkin puree
  • 1 cup Designer Whey French Vanilla
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • 2 tbsp almond milk


  1. Mix all ingredients together until smooth.
  2. Heat butter or oil in large pan over medium heat.
  3. Pour or scoop the batter onto the hot pan in batches (about ¼ cup for each).
  4. Brown on both sides and serve with pure maple syrup and toppings of choice (ideas: shredded coconut, pumpkin seeds, honey, roasted apples, walnuts).
