
Vegan Gluten-free Banana Crumb Muffins

Ingredients
- 2 Chia "eggs" (1 Chia egg = 1 tbsp Chia Seeds + 3 tbsp Water)
- 4 RIPE Bananas, mashed
- 1/2 cup Packed Brown Sugar
- 1/4 cup Coconut Oil, Melted
- 1 tsp Vanilla Extract
- 2 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup GF Flour
- 1/2 cup Sunshine Protein Organic in Vanilla
- 1/2 cup Oats
- 1/4 cup Walnuts, chopped
Crumble
- 1/4 cup Sugar
- 4 tbsp Oats
- 1 tbsp Flour
- 1/8 cup Coconut Oil, Melted
Instructions
- Preheat oven to 375 degrees Fahrenheit
- Make chia egg and let sit for 5 min
- Add mashed bananas, brown sugar, baking soda and salt
- Stir in vanilla and coconut oil
- Fold in flour, protein powder, oats and nuts
- Divide batter into lined muffin tins, just under filling them
- In a new bowl, mix all crumble ingredients with a fork
- Distribute evenly onto muffins
- Bake for 18-22 minutes, or until a toothpick can be removed cleanly
