Vegan Gluten-free Banana Crumb Muffins

Ingredients
  1. 2 Chia "eggs" (1 Chia egg = 1 tbsp Chia Seeds + 3 tbsp Water)
  2. 4 RIPE Bananas, mashed
  3. 1/2 cup Packed Brown Sugar
  4. 1/4 cup Coconut Oil, Melted
  5. 1 tsp Vanilla Extract
  6. 2 tsp Baking Soda
  7. 1/2 tsp Salt
  8. 1 cup GF Flour
  9. 1/2 cup Sunshine Protein Organic in Vanilla
  10. 1/2 cup Oats
  11. 1/4 cup Walnuts, chopped
Crumble
  1. 1/4 cup Sugar
  2. 4 tbsp Oats
  3. 1 tbsp Flour
  4. 1/8 cup Coconut Oil, Melted
Instructions
  1. Preheat oven to 375 degrees Fahrenheit
  2. Make chia egg and let sit for 5 min
  3. Add mashed bananas, brown sugar, baking soda and salt
  4. Stir in vanilla and coconut oil
  5. Fold in flour, protein powder, oats and nuts
  6. Divide batter into lined muffin tins, just under filling them
  7. In a new bowl, mix all crumble ingredients with a fork
  8. Distribute evenly onto muffins
  9. Bake for 18-22 minutes, or until a toothpick can be removed cleanly
