Flourless Chocolate Chip Banana Blender Muffins

  1. 1 can chickpeas, drained and rinsed
  2. 1/2 cup quick oats
  3. 3/4 teaspoon baking powder
  4. 1/8 teaspoon baking soda
  5. 1 large over-ripe banana
  6. 1/4 cup almond butter
  7. 1/4 cup pure maple syrup
  8. 2 teaspoons vanilla extract
  9. 1 serving Totally Egg Classic Vanilla Protein Powder
  10. 1/2 cup semi-sweet chocolate chips {optional}
  1. Preheat oven to 350°F and line a muffin pan with paper muffin cups.
  2. In a high-speed blender or food processor, combine all ingredients except the chocolate chips.
  3. Mix until combined.
  4. Fold in chocolate chips.
  5. Fill each cup with batter, then bake until a toothpick inserted in the center comes out clean, about 10-15 minutes.
  6. Let cool 5-10 minutes. Enjoy!
