APPLE-DIJON BRAISED CHICKEN SKILLET

Chicken
  1. 4 boneless skinless chicken breasts (1 1/2 lbs.)
  2. 1 1/2 tablespoons Dijon mustard
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon pepper
Skillet
  1. 1/2 onion, chopped
  2. 5 garlic cloves, minced
  3. 1 1/2 cups long-grain white rice
  4. 2 cups low sodium chicken broth
  5. 1 1/2 cups apple juice
  6. 2 tablespoons Dijon mustard
  7. 1 tablespoon apple cider vinegar
  8. 1/2 teaspoon oregano
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon pepper
  11. 1/4 teaspoon dry thyme
  12. 3 cups broccoli florets
Instructions
  1. In a small bowl, mix 1 1/2 tablespoons Dijon mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  2. Heat 2 tablespoons olive oil over medium high heat in a large skillet. Coat chicken with Dijon/salt/pepper mixture and add to sizzling skillet.
  3. Sear chicken until golden, approximately 3-5 minutes per side, remove to a plate. (Chicken will finish cooking with rice)
  4. Heat 1 tablespoon olive oil in the skillet.
  5. Add onion and saute for 3 minutes, scraping up any seasonings that may have come off the chicken. Add garlic and rice and saute for an additional 2 minutes.
  6. Stir in chicken broth, apple juice, 2 tablespoon Dijon, apple cider vinegar, oregano, salt, pepper and thyme. Bring to a boil, then cover and reduce heat to low.
  7. Simmer for 12 minutes.
  8. After 12 minutes, stir then add the chicken into the mix. Add the broccoli on top.
  9. Cover the pot and cook on low for 10-15 minutes longer, or until rice and chicken are done and broccoli is tender. Make sure not to burn the bottom!
  10. Once rice and chicken are done, remove and let cool before serving
  11. Enjoy!
