Ingredients
  1. 1 Sweet potato
  2. ½ onion
  3. 1 bell pepper
  4. 1 cup brussel sprouts
  5. 3 tbsp oil
Instructions
  1. Finely dice all the veggies
  2. Spread them out on a greased baking sheet
  3. Sprinkle salt/pepper, 2 teaspoons paprika
  4. Broil on High right until a char first appears
  5. Remove sheet from oven, allow it to cool
  6. Pan fry with eggs for an amazing breakfast hash
  7. Save the leftovers to add roasted veggies to any meal!
