Whey is the liquid component of cows’ milk, which is separated from the solid component, curd, during the cheese-making process. Natural whey contains water, protein, fat, minerals and lactose.

Whey products are produced when the protein elements are separated through special filtering processes or by ion exchange. This process removes the lactose and fat and leaves a highly concentrated protein that is dried into a highly functional protein powder. The ion exchange process isolates the protein from the lactose and fat due to its electrical charge.

The two main types of whey protein on the market are whey protein concentrate and whey protein isolate. Whey concentrate ranges from 19-89% protein, typically 80% in nutritional foods, 34% in infant formula, and whey isolate contains at least 90% protein. Whey protein is the highest quality product. It's a complete protein, which means it contains all nine essential amino acids, the building blocks of healthy muscles, skin, nails and other body tissues.

Whey protein is the most studied protein on the market and for good reason. It’s one of the highest quality proteins available and easily digested, making it the gold standard for protein.  All of the examples below are based on scientific research:

Scientists have various methods of measuring protein quality. Biological Value (BV) is a measure of a particular protein’s effect on nitrogen balance. The protein digestibility corrected amino acid score (PDCAAS) is a measure of how well a particular protein supplies the nine essential amino acids. Whey protein PDCAAS is 1.14, as compared to 0.94 for beef protein, and its BV is 104, compared to 100 for eggs.

In addition, whey protein empties from the stomach and is absorbed into the bloodstream from the intestine faster than any other protein sources. Due to whey’s quick digestion it has been called the “fast protein” and is the preferred protein to flood the body with amino acids so muscles can recover quicker.

Moreover, whey protein contains especially high concentrations of the branched chain amino acids (BCAAs) that are metabolized at high rates during exercise, most notably valine, isoleucine, and leucine.

While both are natural dairy products, milk contains roughly 3.3% protein that is comprised of 80% casein protein and 20% whey.

Both are high quality and complete proteins, however, whey is a quickly digestible and assimilated protein- meaning the body uses it quickly.  Casein, also of high quality, is digested slowly which keeps a nice continuous flow of amino acids in the blood stream.

Whey is best really anytime, but really excels over casein on its speed of delivery. Casein's advantage over whey is the slow digestion rate makes it great right before bed time.

Biological Value (BV) is a measure of nitrogen (protein) retained for growth and/or tissue maintenance. The BV of common food protein is based upon a study, which demonstrates that whey protein had the highest biological value of all food-grade proteins at 104. For comparison, consider the BV of these other food proteins: soy (74), casein (77) and egg (100).

The glycemic index refers to how a food, usually a carbohydrate, affects your body’s blood sugar (glucose). Proteins and fats, by nature, have little effect on blood sugar response. Research shows that protein-only meals have either a little to no effect on blood glucose.
